Guys… I just had to share this recipe for Sweet Potato Pizza Crust. Yes. Sweet potatoes. Really. No, I’m totally serious – don’t even argue with me; it’s fantastic. The following recipe yields 1 12″ round crust right at 1080 calories, but you could probably spread it thinner and make it bigger OR split it in two, if you like!
Ingredients for dough:
- 2 large or 3 medium-sized sweet potatoes(each medium sweet potato is approximately 160 calories) peeled, chopped into cubes, and then boiled until soft. Drain them and then mash into 1 cup.
- 1 tbsp olive oil (120 cals)
- 1 large garlic clove crushed or diced or minced or however
- 1/2 tsp salt
- 1 cup almond flour (640 cals)
- 1tbsp Italian seasoning
Knead all of it together, then spread out over baking pan/pizza stone/what-have-you and stick int he oven at 400 degrees for 15 mins, or until the crust begins to brown. Take the crust out, add your toppings, and then finish cooking your pizza!
